Healthy vegan sweet potato and nut butter brownies

These vegan brownies have been made by the lovely Alix Arnt (You can follow Alix on instagram @alix2727) and are such a healthy take on the classic.

Ingredients:

300g cooked sweet potato
200g nut butter of your choice
100g sugar of your choice
40g Pacari Organic Drinking Cacao*
1tsp bicarb of soda
50g of sultanas (optional)
For the topping:
Pacari chocolate of your choice

Method:

Mash up the sweet potato with a fork. For best results use the sweet potato while it is still warm. Add the nut butter (Alix likes to use crunchy peanut butter or cashew nut butter) and the sugar (again, Alix recommends coconut sugar or raw brown sugar) and mix well. Then add the cacao powder, bicarb and some sultanas, if you like some extra sweetness.

Line a 20x20cm baking tray with baking paper, pour in the mixture and smooth until flat.

Preheat oven and bake at 200 degrees until a scewer inserted in the middle comes out clean.

Remove from oven and grate some of your favourite dark chocolate on top. Alix used our Organic Dark Chocolate with Orange on one half and our Organic Dark Chocolate on the other for an extra kick. Wait until melted and smooth all over the brownies.
